Ingredients

  • 1 1/4 cups flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chip

Directions

  • 1 Add the first 4 ingredients to a mixing bowl; stir to combine.
  • 2 In another smaller bowl, whisk the eggs, milk, oil, and vanilla; add to the dry ingredients and mix well.
  • 3 Heat a non-stick griddle or skillet over medium-high heat.
  • 4 Spray lightly or brush with vegetable oil.
  • 5 Pour 1/4 cup batter onto griddle for each pancake.
  • 6 Scatter approximately 10 chocolate chips (the amount is subjective, add more if you like) on top of each pancake.
  • 7 Cook until bubbles form on the surface (about 2 minutes); flip pancake and cook until golden on the other side.
  • 8 Serve with preferred topping.
