Hard-boiled Egg Whites With Avocado

Ingredients

  • 8 large eggs
  • 2 avocados
  • 1/4 teaspoon coarse salt
  • fresh ground pepper
  • 1 tablespoon extra virgin olive oil

Directions

  • 1 Cover eggs with cold water in a large pan.
  • 2 Bring to a boil.
  • 3 Cover, remove from heat, and let stand 20 minutes.
  • 4 Remove eggs to cool water and allow to cool.
  • 5 Peel eggs.
  • 6 Separate yolks from whites (save yolks for another use).
  • 7 Tear whites into 1-inch pieces and place in small mixing bowl.
  • 8 Halve and pit the avocados.
  • 9 Using a spoon, scrape out small pieces.
  • 10 Add to egg whites.
  • 11 Season with salt and pepper.
  • 12 Divide eggs and avocado mixture between 4 cereal bowls and drizzle each with olive oil.
