Hard-boiled Egg Whites With Avocado

Ingredients
- 8 large eggs
- 2 avocados
- 1/4 teaspoon coarse salt
- fresh ground pepper
- 1 tablespoon extra virgin olive oil
Directions
- 1 Cover eggs with cold water in a large pan.
- 2 Bring to a boil.
- 3 Cover, remove from heat, and let stand 20 minutes.
- 4 Remove eggs to cool water and allow to cool.
- 5 Peel eggs.
- 6 Separate yolks from whites (save yolks for another use).
- 7 Tear whites into 1-inch pieces and place in small mixing bowl.
- 8 Halve and pit the avocados.
- 9 Using a spoon, scrape out small pieces.
- 10 Add to egg whites.
- 11 Season with salt and pepper.
- 12 Divide eggs and avocado mixture between 4 cereal bowls and drizzle each with olive oil.
