Rhubarb Relish

Ingredients
- 2 cups rhubarb, finely chopped (fresh or frozen)
- 2 cups finely chopped onions
- 2 1/2 cups packed brown sugar
- 1 cup vinegar
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon ground cloves
- 1/4 teaspoon pepper
Directions
- 1 Combine all ingredients in a saucepan. Cook over medium heat for 30 minutes or until thickened, stirring occasionally.
- 2 Cool; store in the refrigerator.
- 3 Makes a nice condiment for poultry, pork or beef.
