Baked Spinach Parmesan Dip

Ingredients

  • 1 (10 ounce) package thawed frozen chopped spinach
  • 1 cup mayonnaise
  • 1 (3 ounce) package cream cheese (I use reduced fat cream cheese)
  • 1 onion, peeled and minced
  • 1 garlic clove, minced
  • 1 cup grated parmesan cheese
  • 2 tablespoons grated parmesan cheese
  • 1/8 teaspoon pepper
  • 1/2 teaspoon paprika
  • 2 (2 ounce) French baguettes, thinly sliced

Directions

  • 1 Squeeze spinach to remove liquid. With a mixer, beat spinach, mayonnaise, cream cheese, onion, garlic, one cup of the parmesan cheese, and pepper until thoroughly combined.
  • 2 Mound mixture in a 3-4 cup baking dish.
  • 3 Sprinkle evenly with 2 tablespoons of parmesan cheese and the paprika.
  • 4 Bake in a 350 degree F. oven until hot in center and lightly browned on top, about 25 to 30 minutes.
  • 5 Serve hot to spread on baguette slices.
