Caribbean Chicken

Ingredients

  • 1/4 cup butter
  • 2 whole chicken breasts, halved
  • 1 teaspoon salt, divided
  • 1/2 teaspoon dried tarragon leaves, divided
  • 2 tablespoons lime juice
  • 2 tablespoons water
  • 1/2 teaspoon Tabasco sauce
  • hot cooked rice (I use Jasmine)

Directions

  • 1 Heat Butter in skillet.
  • 2 Add chicken breasts skin side down.
  • 3 Sprinkle with 1/2 salt and 1/2 tarragon.
  • 4 Cook over medium heat until browned, about 10 minutes.
  • 5 Turn chicken breasts.
  • 6 Sprinkle with remaining salt and tarragon.
  • 7 Cook until brown, about 10 more minutes.
  • 8 Combine lime juice, water and tabasco sauce.
  • 9 Pour over chicken.
  • 10 Cover and simmer 10 minutes longer or until chicken is tender.
  • 11 Serve over hot cooked rice.
