Caribbean Chicken

Ingredients
- 1/4 cup butter
- 2 whole chicken breasts, halved
- 1 teaspoon salt, divided
- 1/2 teaspoon dried tarragon leaves, divided
- 2 tablespoons lime juice
- 2 tablespoons water
- 1/2 teaspoon Tabasco sauce
- hot cooked rice (I use Jasmine)
Directions
- 1 Heat Butter in skillet.
- 2 Add chicken breasts skin side down.
- 3 Sprinkle with 1/2 salt and 1/2 tarragon.
- 4 Cook over medium heat until browned, about 10 minutes.
- 5 Turn chicken breasts.
- 6 Sprinkle with remaining salt and tarragon.
- 7 Cook until brown, about 10 more minutes.
- 8 Combine lime juice, water and tabasco sauce.
- 9 Pour over chicken.
- 10 Cover and simmer 10 minutes longer or until chicken is tender.
- 11 Serve over hot cooked rice.
