Garlic Mashed Potatoes

Ingredients

  • 5 large potatoes, peeled and cut into 1/2 inch cubes (about 2 1/2 pounds)
  • 15 garlic cloves, peeled and halved
  • 2 teaspoons salt, divided
  • 1/2 cup butter, softened
  • 1/2 cup whipping cream

Directions

  • 1 Place potatoes, garlic and 1 teaspoon salt in a large saucepan; add enough water to cover.
  • 2 Bring to a boil; reduce heat.
  • 3 Cover and simmer until potatoes are tender, about 10 minutes; drain.
  • 4 Transfer potatoes and garlic to a mixing bowl; mash or put through ricer.
  • 5 Add butter, cream and remaining salt; beat until smooth.
  • 6 Do not overbeat potatoes lest they turn into a glutenous mass!
