Yukon Gold Scallion Smashers

Ingredients

  • 2 lbs yukon gold potatoes
  • 4 tablespoons butter, melted
  • 1 cup milk, heated
  • 1 bunch scallion, diced
  • salt and pepper

Directions

  • 1 Wash potatoes and place in pot with enough water to cover. Bring to a boil and cook until tender when pierced with a fork, 40-50 minutes.
  • 2 Drain and place in a large mixing bowl. Add milk, butter, scallions and mash, blending well. Season with salt and pepper to taste.
  • 3 Serve piping hot.
