Yukon Gold Scallion Smashers

Ingredients
- 2 lbs yukon gold potatoes
- 4 tablespoons butter, melted
- 1 cup milk, heated
- 1 bunch scallion, diced
- salt and pepper
Directions
- 1 Wash potatoes and place in pot with enough water to cover. Bring to a boil and cook until tender when pierced with a fork, 40-50 minutes.
- 2 Drain and place in a large mixing bowl. Add milk, butter, scallions and mash, blending well. Season with salt and pepper to taste.
- 3 Serve piping hot.
