Carrots Amaretto

Ingredients
- 1 lb carrot
- 3 tablespoons butter
- 2 tablespoons sugar
- 1/4 cup Amaretto
- salt and pepper
Directions
- 1 Parboil sliced carrots (I usually use the baby carrots whole) until al dente, about 10 minutes.
- 2 Drain and rinse under cold water to stop cooking. This can be done a couple of hours ahead of time.
- 3 Heat butter over medium heat until melted. Add carrots, sugar and heat to caramelize sugar.
- 4 Add Amaretto and cook to reduce sauce to a glaze.
- 5 Season to taste with salt and pepper.
- 6 Serve immediately.
