Carrots Amaretto

Ingredients

  • 1 lb carrot
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1/4 cup Amaretto
  • salt and pepper

Directions

  • 1 Parboil sliced carrots (I usually use the baby carrots whole) until al dente, about 10 minutes.
  • 2 Drain and rinse under cold water to stop cooking. This can be done a couple of hours ahead of time.
  • 3 Heat butter over medium heat until melted. Add carrots, sugar and heat to caramelize sugar.
  • 4 Add Amaretto and cook to reduce sauce to a glaze.
  • 5 Season to taste with salt and pepper.
  • 6 Serve immediately.
