Ingredients

  • 2 tomatoes, seeded coarsely chopped
  • 3 tablespoons olive oil, divided
  • 1 tablespoon red wine vinegar
  • 1/2 cup nicoise olive, pitted and coarsely chopped
  • 1/4 cup red onion, chopped
  • 2 tablespoons capers, drained
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 4 (6 ounce) salmon fillets
  • 1/3 cup fresh basil, loosely packed thinly sliced

Directions

  • 1 Combine tomatoes, 2 tablespoons olive oil, red wine vinegar, olives, onion, capers, 1/2 teaspoon salt, 1/2 teaspoon pepper.
  • 2 Set aside.
  • 3 Brush both sides of the salmon with the remaining olive oil.
  • 4 Sprinkle with remaining salt and pepper.
  • 5 Heat a large non-stick skillet over medium-high heat or postion broiler rack so that the top of the fish on rack will be 3 inches from heat source-preheat broiler.
  • 6 Saute or broil salmon 3-4 minutes per side or until cooked through.
  • 7 Add basil to reserved tomato mixture.
  • 8 Serve with salmon.
