1 bell pepper, sliced thin (red or green) (optional)
2 tablespoons butter
1 cup cooked chicken, shredded
1/2-1 cup barbecue sauce
1 -2 cup monterey jack cheese, shredded
cilantro, chopped (optional)
4 large flour tortillas
additional barbecue sauce
Directions
1 Saute onions and bell peppers (if using) in pan with butter. Remove from pan and set aside.
2 In another pan heat through shredded chicken with bbq sauce.
3 Lightly butter one side of a tortilla.
4 Place butter side down in saute pan.
5 Quickly add some of the cheese, chicken and onions (peppers and cilantro, if using) to one half of tortilla. Then quickly fold in half forming a semi-circle.
6 Continue to cook until bottom side is golden brown, then carefully flip quesadilla over.
7 Brown other side and remove from pan.
8 Repeat with remaining ingredients.
9 Cut quesadilla into wedges and serve with additional barbecue sauce.
